Method
- Preheat oven to 350. Line a 9x9 pan with parchment paper and spray lightly with nonstick cooking spray.
- In a large bowl, whisk together flour, baking powder, and salt.
- In a separate bowl, combine melted butter and sugar, then add vanilla and eggs.
- Gradually incorporate wet ingredients into bowl of dry ingredients, stirring in between.
- Gently fold in white chocolate chips.
- Pour mixture into parchment-lined pan, making sure it's evenly spread using a rubber spatula. Top with additional chocolate chips.
- Bake for 35-40 minutes until they appear lightly golden brown on top.
Notes
Tip: wait for these to cool before cutting.
This recipe was written for high altitude kitchens; if baking below 3,000 feet, increase the baking powder by 1/4 tsp and don't omit the 2 tbsp of brown sugar.
