White Chocolate Chip Blondies

Soft, chewy blondies made extra "blonde" with white chocolate chips.

Ingredients
  

  • 2 cups all-purpose flour
  • 1/4 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup butter melted
  • 1 1/2 cups light brown sugar minus 2 tbsp
  • 1 tbsp vanilla extract
  • 2 eggs
  • 1 cup white chocolate chips plus extra for topping

Instructions
 

  • Preheat oven to 350. Line a 9x9 pan with parchment paper and spray lightly with nonstick cooking spray.
  • In a large bowl, whisk together flour, baking powder, and salt.
  • In a separate bowl, combine melted butter and sugar, then add vanilla and eggs.
  • Gradually incorporate wet ingredients into bowl of dry ingredients, stirring in between.
  • Gently fold in white chocolate chips.
  • Pour mixture into parchment-lined pan, making sure it's evenly spread using a rubber spatula. Top with additional chocolate chips.
  • Bake for 35-40 minutes until they appear lightly golden brown on top.

Notes

Tip: wait for these to cool before cutting. 
This recipe was written for high altitude kitchens; if baking below 3,000 feet, increase the baking powder by 1/4 tsp and don't omit the 2 tbsp of brown sugar.
