The Ultimate White Chocolate Chip Blondies

Soft, chewy blondies that are extra “blonde” with the addition of white chocolate chips. These white chocolate chip blondies are easy to make, only require a handful of ingredients, and won’t take long to disappear!

I know we’ve all felt this way a lot in the past year but the pandemic is REALLY getting to me lately. It’s cold. There’s nothing new to watch on Netflix. I miss seeing people. I miss going out for drinks. It’s still not safe to dine indoors. It’s not safe to travel. Okay, those last two things are technically allowed, but they really shouldn’t be (just saying.)

As such, my mental health has taken a tumble the past couple of weeks, and motivation has been low. That said, my craving for sweets clearly hasn’t disappeared, so I’ve been all about easy bakes lately.

Enter these quick-to-make white chocolate chip blondies. I LOVE blondies. Almost more than brownies (there, I said it.) I know people feel very strongly about the brownies vs. blondies debate, but like why not both?

How to Make White Chocolate Chip Blondies

This recipe is great because you don’t need any special tools or a Kitchenaid to make it. I added in white chocolate chips because they’re delicious and frankly underrated, but you could also use regular chocolate chips, sprinkles, or M&Ms if you’re feeling crazy. But seriously, I don’t care, live your life.

Basic Ingredients

  • All-purpose flour
  • Baking powder
  • Salt
  • Butter
  • Brown sugar
  • Eggs
  • Vanilla extract
  • White chocolate chips–I always like to use Ghirardelli chocolate chips, but if you prefer the cheaper Target brand I won’t judge ya.

Really all you need for this besides the above ingredients are two bowls, a spoon, parchment paper, and a 9×9 pan–and hopefully not an empty stomach or you might eat the whole pan.

White Chocolate Chip Blondies

Ingredients Method Notes

Ingredients
  

  • 2 cups all-purpose flour
  • 1/4 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup butter melted
  • 1 1/2 cups light brown sugar minus 2 tbsp
  • 1 tbsp vanilla extract
  • 2 eggs
  • 1 cup white chocolate chips plus extra for topping

Method
 

  1. Preheat oven to 350. Line a 9×9 pan with parchment paper and spray lightly with nonstick cooking spray.
  2. In a large bowl, whisk together flour, baking powder, and salt.
  3. In a separate bowl, combine melted butter and sugar, then add vanilla and eggs.
  4. Gradually incorporate wet ingredients into bowl of dry ingredients, stirring in between.
  5. Gently fold in white chocolate chips.
  6. Pour mixture into parchment-lined pan, making sure it's evenly spread using a rubber spatula. Top with additional chocolate chips.
  7. Bake for 35-40 minutes until they appear lightly golden brown on top.

Notes

Tip: wait for these to cool before cutting. 
This recipe was written for high altitude kitchens; if baking below 3,000 feet, increase the baking powder by 1/4 tsp and don’t omit the 2 tbsp of brown sugar.
