Chocolate Chip Cadbury Mini Egg Cookies

A fun Easter treat! These candy egg cookies are adapted from one of my favorite chocolate chip cookie recipes. Bonus: no need to cream the butter or chill the dough.

To be honest, I never ate Cadbury eggs growing up (I was more interested in the chocolate bunnies.) But the candy has definitely grown on me as I’ve gotten older, and I wanted to incorporate them into an Easter dessert. I adapted a few of my favorite chocolate chip cookie recipes to make these festive Cadbury mini egg cookies! They’re easy to make, don’t require a stand mixer, and of course, festive.

How to Make Chocolate Chip Cadbury Mini Egg Cookies

Basic Ingredients

  • Butter, melted
  • Granulated sugar
  • Light brown sugar
  • Egg
  • Vanilla extract
  • All-purpose flour
  • Baking soda
  • Salt
  • Semi-sweet or milk chocolate chips

Making the dough: The best part of these cookies is how easy they are to throw together: you don’t have to break out the stand mixer to cream the butter and sugar. Plus, letting the butter and sugars melt together creates chewier cookies that are rich in flavor. I allow the butter and sugars to sit for about 5 minutes or so to allow the flavors to really come together. Also, we want them to come to room temperature before combining with other ingredients.

Dough temperature: This recipe doesn’t require chilling, but you can if you’d like! Chilling cookie dough yields cookies that are more “puffy” than flat when baked and can yield a richer flavor.

Topping the cookies: I topped the cookies with a few Cadbury eggs each, but you could also mix additional candy eggs into the dough along with the chocolate chips. If you love Cadbury eggs, this is definitely the route to go!

After baking: Make sure to let the cookies continue to sit on the hot pan immediately after removing from the oven. They’ll continue baking slightly.

Cadbury Mini Egg Chocolate Chip Cookies

Ingredients
  

  • 1/2 cup butter (one stick) melted
  • 1/4 cup granulated sugar
  • 1/2 cup light brown sugar packed
  • 1 egg
  • 1/2 tbsp vanilla extract
  • 1 1/2 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup semi-sweet chocolate chips
  • 10 oz package Cadbury mini eggs

Instructions
 

  • Preheat oven to 375 degrees F.
  • Melt butter in microwave safe bowl; in another bowl, add the granulated and brown sugars. Pour the melted butter over the sugars and let sit for several minutes.
  • While butter mixture cools slightly, measure out flour, baking soda, and salt, and whisk together in a bowl.
  • Into the butter and sugar, add egg and vanilla, and then gradually stir in the dry ingredients. Mix in your chocolate chips.
  • Scoop tablespoonfuls of dough onto a lined baking sheet, spaced about 2 inches apart. Press 2-3 Cadbury eggs into the top of each spoonful of dough.
  • Bake for 8-10 minutes. After removing from the oven, let the cookies stay on the pan for about 10 minutes before transferring to a cooling rack.

Notes

Store in an airtight container or gallon size plastic bag.
