Happy St. Patty’s Day! When I was initially brainstorming what to bake for today, I was a bit stuck. When I think of the Irish holiday, I immediately think of Bailey’s, Guinness, and Lucky Charms. I wasn’t feeling particularly inspired by either booze or cereal.
Instead, I embraced the color green with matcha powder! Matcha may have absolutely nothing to do with Ireland, but the color of matcha is so naturally festive and perfect for spring that I couldn’t resist. I’m also a big matcha latte fan (when my body can tolerate caffeine, that is.) I’m also a BIG white chocolate fan, so why not combine the best of both worlds?
How to Make Matcha White Chocolate Chip Cookies
Basic Ingredients
- All-purpose flour
- Sugar
- Brown sugar
- Baking soda
- Salt
- Egg
- Butter
- Vanilla extract
- Matcha powder
- White chocolate chips
Tips for the Best Cookies
- CHILL. CHILL. CHILL. I tend to want to skip the chilling step when baking cookies, but this is super necessary here. When I made this recipe the first time I skipped the chilling, and they spread out into flat, greasy disc-like messes.
- Use good quality matcha powder. My go-to is Jade Leaf Matcha, but I’m sure there are even more authentic (albeit probably pricier) matcha powders available.
- I found that 2 tsp of matcha powder was plenty for that green tea flavor and color I was looking for, but you could add a bit more if you’re looking for extra matcha flavor.

Matcha White Chocolate Chip Cookies
Equipment
- Stand mixer
Ingredients
- 1 1/2 cup all-purpose flour
- 3/4 tsp baking soda
- 1/4 tsp salt
- 2 tsp matcha powder
- 1 cup butter plus 2 TBSP, softened to room temperature
- 1 egg
- 1/4 cup sugar
- 3/4 cup brown sugar
- 3/4 tsp vanilla extract
- 1 cup white chocolate chips
Instructions
- In the bowl of your stand mixer, cream together butter and sugars until light and fluffy, about 2-3 minutes.
- Add egg and vanilla extract to butter/sugar mixture, mixing in between each ingredient.
- In a separate bowl, measure out flour, baking soda, salt, and matcha powder. Whisk to combine.
- Gradually mix the dry ingredients into the wet ingredients. Once combined (don't over-mix!) you can stir in the white chocolate chips with a wooden spoon.
- Cover bowl with cling wrap and chill in the fridge for at least 2 hours (or overnight.)
- Preheat oven to 350 degrees.
- After chilling the dough, place rounded tablespoonfuls onto parchment-lined baking sheet. Bake for 9-12 minutes, and keep a close eye because they can burn quickly!
- Let hot cookies sit on baking sheet for 5-10 minutes before moving to cooling rack. Enjoy them slightly warm or after they have fully cooled!
