These flatbread naan pizzas are topped BBQ chicken, mozzarella cheese, parsley, and green onions. One of my favorite ways to use up leftover rotisserie chicken and it makes for a quick and tasty dinner!
Well we’re officially into March, which means that we’ve now been in a pandemic for a full year. Instead of being bitter about losing a year of fun in my 20s, I’m trying to see the positives that came out of this weird, crazy, horrible–and yes, unprecedented–past year.
For one, I’ve saved SO much money not buying clothes. Like I can’t believe how much I spent on clothes in 2019 compared to 2020, and it feels good. Fast fashion retailers definitely don’t need my dollars.
I also feel like I’ve gotten more adventurous/skilled when it comes to making dinner! I’ve tried plenty of new recipes over the past year and have added several of them to my dinner rotation. This experimentation is what led to these yummy flatbread pizzas, which are super easy to make.
How to Make BBQ Chicken Naan Flatbread Pizzas
I’ve always been a fan of using naan bread as a base for flatbread pizzas, but these are one of my new favorites because they’re a great way to make use of leftover chicken. When I last made this recipe, I’d already shredded a rotisserie chicken to make a Super Bowl buffalo dip and just used the leftovers for these.
Basic Ingredients
- 1 package of garlic naan flatbreads–grab the kind that comes with two flatbreads
- Your favorite BBQ sauce (I use Stubb’s)
- Shredded chicken–I used rotisserie chicken, but chopped up or shredded grilled chicken breast works too
- Mozzarella cheese
- Fresh parsley
- Green onions
These are beyond easy to make, especially if your chicken is already shredded. I coated the chicken in BBQ sauce in addition to brushing the naan flatbreads with sauce. When topping, add on chicken, cheese, and parsley. I also added green onions after baking.
BBQ Chicken Naan Flatbread Pizzas
Ingredients
- 2 naan flatbreads
- 3/4 cup chicken breast cooked and shredded
- 1/4 cup your favorite BBQ sauce plus 2 TBSP for mixing with chicken
- 1/2 cup mozzarella cheese
- fresh parsley for topping
- green onions for topping
Instructions
- Preheat your oven to 400 degrees and line a baking sheet with foil.
- Spread BBQ sauce as your first layer on naan flatbreads.
- Mix together cooked and shredded chicken with 2 TBSP BBQ sauce, then add to your flatbreads.
- Sprinkle mozzarella cheese on top of flatbreads.
- Bake for about 10 minutes, until cheese is melty.
- Top with parsley and/or green onions, and enjoy!
